From Substance* to Haut-Doubs, Matthias Marc’s return to his roots
Born in 1993 in Doubs, from a family of foresters for six generations, Matthias Marc grew up between sawmills, fishing trips, picking and large tables. Trained at the Hyacinthe-Friant hotel high school in Poligny, he then joined the Saint-James in Bouliac, the Hôtel de Paris in Monaco in the world of Alain Ducasse, Lasserre and Le Meurice in Paris, then Racines des Prés.
