The Venice lagoon is preparing to welcome a new address which is already attracting the attention of gourmets. On the island of Giudecca, an ultra-confidential hotel offers a cast of chefs rarely gathered in the same house, with a culinary promise that goes beyond the simple status of a hotel restaurant.

Behind this project, we find Airelles Collection, the group of Stéphane Courbit, who chose Venice to open Airelles Palladio, his first Maison outside France. Housed in a 16th-century property on the island of Giudecca, facing St. Mark’s Square, Airelles Palladio, Venice has 17 rooms, 28 suites and a private villa nestled in historic buildings. Gardens facing the lagoon, large spa, swimming pools and kids club complete this setting designed for an international clientele looking for intimacy rather than spectacle.

For Airelles Collection, already present in Courchevel, Saint-Tropez, Gordes and at the Palace of Versailles, Venice marks a turning point: it is the first address opened outside France and a full-scale test of its strategy. Matsuhisa Venice and abc Kitchens Palladio, two styles facing the lagoon

To accompany this opening, Airelles entrusts his evening address to Nobu Matsuhisa. Matsuhisa Venice becomes the chef’s first restaurant in Japan–Peru in Italy, with dinner service only and a terrace overlooking the gardens. On the menu, his signature: crudos, sashimi, tempuras, Omakase menu and the essential black cod, which have built the global reputation of the Matsuhisa brand.

A few meters away, Franco-American chef Jean-Georges Vongerichten signs the first Italian establishment of his ABC Kitchens Palladio concept, already available in New York, Tokyo and London. Here, the atmosphere is more relaxed, from morning to evening, around Mediterranean cuisine inspired by Italian products and the Venetian region: burrata with Amalfi lemon, crispy squid with parmesan, pasta, pizzas, veal Milanese or line-caught sea bass with green olives.

Airelles Palladio does not stop at this duo. Three-star chef Norbert Niederkofler runs Villa Frollo with his “Cook the Lagoon” concept, a lagoon variation of his mountain cuisine approach. There he works with products from the Venetian lagoon and revisits local classics in an intimate gastronomic register, echoing the historic architecture of the palace.

On the sweet side, Cédric Grolet is bringing his signature to Italy for the first time, with his trompe-l’oeil fruits and flowers and creations inspired by transalpine pastry traditions for the entire hotel. On September 4, 2026, Nobu Matsuhisa, Jean-Georges Vongerichten, Norbert Niederkofler and Cédric Grolet come together for an inaugural dinner for eight hands in the gardens of the Airelles Palladio, symbol of an assumed strategy: making haute gastronomy one of the driving forces of the experience offered by Airelles Collection in Venice.
